EPA means End Point Adjustment.
Which means that, IF your TX has this function, that you can adjust the end throw of your servos, usually up to 150%. So if you are not satisfied with the current throw of your servo look for this adjustment in the manual of your TX.
All modern RC gear has this function. Which TX/Rx are you using?

Centre the sail servo with a servo tester and then see how it moves.
Set the winch and see where its maximum travel is required take note that the sail at dead centre will be with the stick in the centre ( sail should not be Taut)
A lot of guys running Hitec's mark the transmitter with a piece of white tape to stop overtravel

I agree with Graham adjust the stick centre trim first, then you can set everything else from there.

Sailors usually remove the spring centring of the left stick, is the Tx new? You may well have the ratchet modification in a small plastic bag.
With the ratchet in place you can reach a correct setting of the sails and just leave the Tx stick in this position rather than having to hold it in place.

That’s what I thought you were doing. Sounds like the servo is working correctly then. The HS-785HB is specified for 3 1/2 turns from end to end of the stick travel. So I would expect 1 3/4 turns when you push the stick up from centre and 1 3/4 turns when you pull the stick down from centre. Giving a total of 3 1/2 turns. You are getting slightly more than that. Adjusting your stick centre trim would even up the rotation.

Puzzled by your explanation. Are you driving it from a centre sprung stick on your Transmitter. From your question it sounds like you may be. In which case, you are getting 3 3/4 turns in total which sounds about right.
I have a couple of the same servos on order from Santa for my sailboat, but I’ll have to wait until he delivers them Friday. 😂🤣
