Picture 4 - A Round Turn and 2 Half Hitches and a Fishermans Bend - please note they are basically the same with the exception of the first hitch goes under the round turns in the Fishermans Bend.
Picture 5 - A rolling Hitch both left and right handed pull - please note that some people teach and prefer if using man made fibre ropes the first bit do not cross but wrap around the object in question - the say it provides more friction with the slipary nature of the rope

I really like them, and you're certainly right—they're useful in general, but also in modeling.
I'm familiar with both nautical and rock/mountain knots, but I know their specific Italian terms.
To verify their English equivalent, I'd have to do some research online.
If you'd like, please attach photos of the knots you mentioned, I'd appreciate it.

What are the following Bends and Hitches used for:-
1. A Fishernams bend
2. A Carrick Bend
3. A Rolling Hitch
4. A Bowline on the Bight
5. A Rolling Hitch
This is an easy peasy quest that persons only interested in model building should be able to answer.
