For everyone I say this:
You are right to look for an ideal curvature for your sails but think about the wing lift formula.
Considering only the factors that can be modified (certainly not the density of the air), it is clear that the surface area and the wing coefficient influence in a linear manner while the speed influences in an exponential manner.
In reality we can't even act on the speed (which is that of the wind) but just hope that there are enough knots.
I have seen sails that looked like sheets hanging out in the sun and still managed to sail even in clause hauled.
This is not to say that structuring a sail in the best possible way is not important, but what is most important is the wind.
My intent is not to criticize anyone's comments but only to reassure Rogal who did an excellent job with both the model and the sails.

Also have an Atlantis the same deal hull, cabins, ballast weight and drop down motor. so I could do with some instructions plans to help me get these done and sailing.any help and pointers would be great

As said it works like an air plane wing. Air has to travel further around the back of the front this means it travels faster. Faster means low pressure on the back and high pressure on the front.
More camber means more drive at the expense of being able to sail code to the wind too much and tacking becomes difficult, I wouldn’t put quite as much in the small sail at the back. It’s about trial and error. Hope this helps.
Also the angle of the booms relative to the center line has an effect when sails pulled right in.The job should be further out than the mainsail to allow the air to flow round the back of the main.
The main boom should be off center by a few degrees.

In my opinion your ship is excellently built and could withstand the winds without any problems.
During this test there was very little wind (it seemed like no wind to me) it didn't even tilt to one side a little.
When there is more wind you will have much more fun, but as a first try it is fine.
To have fun and get satisfaction from your excellent naval model, once you have identified the direction of the wind, you will make it arrive almost on the opposite shore and then return without ever using the propeller, performing a turn and tacking when you go against the wind.

Speaking as a fellow modeller and no expert I think she looks serene on the water and just how a beautiful sailing ketch should look. You were so fortunate with the weather not only sunshine but a light breeze just what is needed for a first trial launch.
I hope everything went as hoped and she remained dry below decks.
The video and photos give the rest of something to aim for and in my case with more speed well done my guess is you are a happy bunny tonight.
